Southern Italian–Style Lasagna with Zucchini, Tomato & Basil

Ingredients (serves 6–8)

  • Lasagna sheets (fresh or dried, eggless if you want to keep it more southern-traditional): ~300 g ( these can also be omitted its up to you :)

  • Zucchini: 3–4 medium, sliced into thin rounds

  • Fresh tomatoes: 1.2 kg (about 8 large), peeled & chopped (or high-quality canned peeled tomatoes if out of season)

  • Garlic: 3 cloves, finely sliced

  • Fresh basil leaves: 1 large bunch

  • Olive oil (extra virgin): ~6 tbsp

  • Ricotta cheese: 400 g

  • Mozzarella (fresh, drained & torn): 250 g

  • Pecorino Romano (or Parmigiano if preferred): 100 g, grated

  • Salt & pepper to taste

  • Chili flakes (optional, for a Calabrian kick)
