Southern Italian–Style Lasagna with Zucchini, Tomato & Basil
Ingredients (serves 6–8)
Lasagna sheets (fresh or dried, eggless if you want to keep it more southern-traditional): ~300 g ( these can also be omitted its up to you :)
Zucchini: 3–4 medium, sliced into thin rounds
Fresh tomatoes: 1.2 kg (about 8 large), peeled & chopped (or high-quality canned peeled tomatoes if out of season)
Garlic: 3 cloves, finely sliced
Fresh basil leaves: 1 large bunch
Olive oil (extra virgin): ~6 tbsp
Ricotta cheese: 400 g
Mozzarella (fresh, drained & torn): 250 g
Pecorino Romano (or Parmigiano if preferred): 100 g, grated
Salt & pepper to taste
Chili flakes (optional, for a Calabrian kick)
